Part of basic everyday meal, versatile, feel good kind of curry and also simple enough to make frequently.<\/p>\n<p><strong>Recipe:<\/strong><\/p>\n<blockquote><p>1 bunch of spinach, washed and <strong>chopped coarsely<\/strong><br \/>\n1 onion, finely chopped<br \/>\n2 green chillies, finely chopped<br \/>\n2 garlic cloves, finely chopped<br \/>\n1 teaspoon, coconut powder or grated<br \/>\nSalt to taste, and pinch of turmeric<br \/>\nFor <i>popu<\/i> &#8211; &frac14; tsp each, mustard seeds and cumin<\/p><\/blockquote>\n<p><center><img decoding=\"async\" src=\"\/mahanandi\/images\/spinachcurry\/spinachcurry1.jpg\" alt=\"Spinach Curry on Whole Wheat Bread\" \/><\/center><\/p>\n<p>Heat one teaspoon of peanut oil in a wide skillet over medium heat.<br \/>\nAdd and toast the mustard seeds, cumin and garlic (<em>popu<\/em>).<br \/>\nAdd the onion and green chillies and saute, stirring, until soft.<br \/>\nAdd the coarsely chopped spinach. Cover and cook them under high heat for about 5 minutes, until they collapse and reduce in volume.<br \/>\nAt this stage, remove the lid and sprinkle the coconut, salt and turmeric. Mix and stir-fry for another 5 more minutes, uncovered, until the water from spinach reduces in quantity.<br \/>\nI also added some pre cooked <a href=\"http:\/\/www.ishopindian.com\/shop\/product.php?productid=21393&#038;cat=0&#038;page=1\">black chickpeas<\/a> (kala Chana) to this curry.<\/p>\n<p>Serve hot.
