Simple technique, but it saves and uplifts them to spicy heaven.  Almost all types of <a href=\"http:\/\/www.nandyala.org\/mahanandi\/archives\/2005\/10\/07\/chitrannamlemon-rice\/?p=314\" target=\"_blank\">curries<\/a>, <a href=\"http:\/\/www.nandyala.org\/mahanandi\/archives\/2006\/02\/16\/coconut-chutney-kobbari-pacchadi\/\" target=\"_blank\">chutneys<\/a>, lentil preparations like <a href=\"http:\/\/www.nandyala.org\/mahanandi\/archives\/2005\/12\/27\/fenugreek-dal-menthi-kura-pappu\/\" target=\"_blank\">dals<\/a>, <a href=\"http:\/\/www.nandyala.org\/mahanandi\/archives\/2005\/09\/20\/sambhar-with-okra\/\" target=\"_blank\">sambhars<\/a> and <a href=\"http:\/\/www.nandyala.org\/mahanandi\/archives\/2005\/06\/02\/chappidi-pappuplain-lentil-soup\/\" target=\"_blank\">rasams<\/a> are enhanced by the addition of <em>popu<\/em> <a href=\"http:\/\/www.nandyala.org\/mahanandi\/archives\/2006\/01\/18\/veg-medley-with-ridge-gourd\/\" target=\"_blank\">at the start<\/a> or <a href=\"http:\/\/www.nandyala.org\/mahanandi\/archives\/2006\/02\/16\/coconut-chutney-kobbari-pacchadi\/\" target=\"_blank\">just before serving<\/a>. The most common ingredients of <em>popu or tadka<\/em> are<\/p>\n<blockquote><p>1. Dried red chilli pieces (<em>Endu Mirchi<\/em>)<br \/>\n2. Garlic (<em>Vellulli<\/em>)<br \/>\n3. Curry leaves (<em>Karivepaku<\/em>)<br \/>\n4. Chana dal (Bengal gram, <em>Sanaga pappu<\/em>)<br \/>\n5. Urad dal (Black gram, <em>Minapa pappu<\/em>)<br \/>\n6. Mixture of Mustard seeds and Cumin (<em>Avaalu+jeelakarra<\/em>)<br \/>\n<small>(listed according to arrangement in the photo above)<\/small>\n<\/p><\/blockquote>\n<p><img decoding=\"async\" src=\"\/mahanandi\/images\/tadka\/tiragamataimagecopyrighted7.jpg\" class=\"noborder\" alt=\"Tadka or popu in one teaspoon of oil\" \/><\/p>\n<p><em>Popu or tadka (tiragamata)<\/em> is toasting the listed ingredients in oil or ghee. Take oil or ghee in a small pan. The quantity ranges from a teaspoon to tablespoon for dals, sambars and curries. Heat to warm. Quickly add and toast curry leaves, dried red chilli pieces, garlic, chana dal and urad dal to red color. At the end add cumin and mustard seeds. When seeds start to pop, turn off the heat. Add the contents of the pan to the preparation. The quantity of above ingredients are usually a pinch, a dash, just few pieces and not much. All of them have excellent health benefits and popu or tadka provides a neat way to have them regularly through our meals. Multi vitamin pill everyday.<\/p>\n<p>There are certain foods and occasions, where we avoid adding garlic. Examples are <a href=\"http:\/\/www.nandyala.org\/mahanandi\/archives\/2005\/10\/07\/chitrannamlemon-rice\/\" target=\"_blank\"><em>chitrannam<\/em> (lemon rice)<\/a>,<em>pulihora<\/em> (tamarind rice) and <em>daddojanam<\/em> (yogurt rice) etc. <\/p>\n<blockquote><p>Fenugreek seeds (<em>menthi<\/em>),<br \/>\n<a href=\"http:\/\/www.nandyala.org\/mahanandi\/archives\/category\/herb-and-spices\/asafoetida-inguva\/\" target=\"_blank\">hing or asafetida<\/a>,<br \/>\nblack peppercorn (<em>miriyalu<\/em>)<\/p><\/blockquote>\n<p>are also part of <em>popu or tadka<\/em>, but they are only added in a few, specific recipes.<\/p>\n<p>To store all the ingredients of <em>popu or tadka<\/em>, every Indian kitchen has a spice box conveniently placed at hands reach in a kitchen drawer. And every Indian cook has her own way of arranging the ingredients in <em>Popu dabba<\/em> (spice box).
