The capital city of my home state, <a href=\"http:\/\/www.aptourism.in\/main.html\" target=\"_blank\">Andhra Pradesh<\/a>, lately known as <a href=\"http:\/\/www.aptourism.in\/hyderabad.html\" target=\"_blank\">Hi-Tech city<\/a>, Hyderabad, has its own unique cuisine. A mishmash, a culinary amalgam influenced by people who migrated to this city from small villages, towns all over <a href=\"http:\/\/www.aptourism.in\/main.html\" target=\"_blank\">Andhra<\/a> and from out of states on jobs, business and to work in political bureaucracy. Foodwise, you can get everything and anything there, almost:). Strong personalities and strong flavors are needed to survive in that city. <\/p>\n<p>One such bold flavored recipe that I learned from a Hyderabad native, is this mango~sesame curry. Unripe mangoes are cooked in <a href=\"http:\/\/store.indianfoodsco.com\/grocery\/ProdDesc.CFM?itemid=DFK45&#038;Description=Jaggery%20-%20Dried%20Sugarcane%20Juice&#038;countryid=&#038;countryname=&#038;countryorderid=\" target=\"_blank\">jaggery<\/a> flavored sesame sauce. 3 strong flavors, unbeatable taste, perfect side dish for subtly bland naans\/chapatis and puris.<\/p>\n<p><center><img decoding=\"async\" src=\"\/mahanandi\/images\/mangosasamecurry\/maamidinuvvulakuraimagecopyrighted1.jpg\" class=\"noborder\" alt=\"Jaggery, Roasted Sesame Seeds, Unripe Mango\" \/><br \/>\n<small>Jaggery, Roasted Sesame Seeds, Unripe Mango ~ Three Strong Flavors<\/small><\/center><\/p>\n<p><strong>Recipe:<\/strong><\/p>\n<blockquote><p>2 green, unripe mangoes &#8211; <small>peeled, seed removed and cubed into bite sized pieces<\/small><br \/>\n1 cup sesame seeds &#8211; lightly roasted and powdered<br \/>\n&frac14; cup of <a href=\"http:\/\/store.indianfoodsco.com\/grocery\/ProdDesc.CFM?itemid=DFK45&#038;Description=Jaggery%20-%20Dried%20Sugarcane%20Juice&#038;countryid=&#038;countryname=&#038;countryorderid=\" target=\"_blank\">jaggery<\/a> &#8211; powdered<br \/>\n1 teaspoon of each &#8211; red chilli powder, salt and turmeric<br \/>\n<u>For <em>popu or tadka<\/em><\/u>:<br \/>\n1 teaspoon of peanut oil<br \/>\n&frac12; teaspoon of each mustard seeds, cumin and few curry leaves.<\/p><\/blockquote>\n<p><font face=verdana><strong>1<\/strong><\/font> Heat peanut oil in a saucepan over medium heat. Add and toast cumin, mustard seeds, curry leaves.<\/p>\n<p><font face=verdana><strong>2<\/strong><\/font> Add mango cubes to the pan, stir in sesame powder, <a href=\"http:\/\/store.indianfoodsco.com\/grocery\/ProdDesc.CFM?itemid=DFK45&#038;Description=Jaggery%20-%20Dried%20Sugarcane%20Juice&#038;countryid=&#038;countryname=&#038;countryorderid=\" target=\"_blank\">jaggery<\/a>, chilli powder, salt and turmeric. Add about 2 cups of water and mix thoroughly. <\/p>\n<p><font face=verdana><strong>3<\/strong><\/font> Cover with lid and cook on medium heat for about 15 to 20 minutes, until the mango pieces soften and the sesame sauce comes together into medium-thick mass. Have a taste and adjust the salt, sweet, spicy levels to your taste.
