It is a standard, no fuss kind of recipe with minimum ingredients. I like the taste of that curry and played around with the recipe little bit and came up with this one. It is also a simple no-nonsense recipe and supplies carbos (<a href=\"http:\/\/www.vadilalgroup.com\/dudhi.html\">bottle gourd<\/a>), protein (black chana) and fat (sesame seeds). I love the taste and also the ease with which it can be prepared. <\/p>\n<p><center><img decoding=\"async\" src=\"\/mahanandi\/images\/sorakaya\/sorakuraimagecopyrighted1.jpg\" class=\"noborder\" alt=\"Bottle gourd Pieces (Sorakaya, Lauki)\" \/><br \/>\n<font face=verdana><small>Bottle Gourd (Sorakaya, Dudhi) &#8211; Peeled, Cut into Cubes<\/small><\/font><\/center><\/p>\n<p><strong>Recipe:<\/strong><\/p>\n<p><font face=verdana><small><strong> Prep Work: <\/strong><\/small><\/font><br \/>\nOne cup of <a href=\"http:\/\/www.ishopindian.com\/shop\/product.php?productid=21393&#038;cat=0&#038;page=1\">black chickpeas (<em>kala chana<\/em>)<\/a>  soaked in water overnight.<br \/>\nHalf of medium-sized <a href=\"http:\/\/www.vadilalgroup.com\/dudhi.html\">bottle gourd (<em>sora kaya, dudhi<\/em>)<\/a>, peeled and cut into half-inch pieces (about 2 cups)<\/p>\n<p><font face=verdana><small><strong>Cook:<\/strong><\/small><\/font><br \/>\nHeat a teaspoon of peanut oil. Toast a teaspoon of cumin, mustard seeds and curry leaves (for tadka).<br \/>\nAdd the bottle gourd pieces and soaked <a href=\"http:\/\/www.ishopindian.com\/shop\/product.php?productid=21393&#038;cat=0&#038;page=1\"><em>kala chana<\/em><\/a>. Saut? for few minutes on medium heat. Add about a cup of water and close the lid and cook.<\/p>\n<p><font face=verdana><small><strong><a href=\"http:\/\/www.ishopindian.com\/shop\/product.php?productid=22094&#038;cat=0&#038;page=1\">Sesame<\/a>&#8211;<a href=\"http:\/\/www.ishopindian.com\/shop\/product.php?productid=21514&#038;cat=0&#038;page=1\">Dalia<\/a> paste:<\/strong><\/small><\/font><br \/>\nMeanwhile prepare the curry thickener. Grind in a blender:<br \/>\n3 tablespoons of each &#8211; <a href=\"http:\/\/www.ishopindian.com\/shop\/product.php?productid=22094&#038;cat=0&#038;page=1\">sesame seeds<\/a> and <a href=\"http:\/\/www.ishopindian.com\/shop\/product.php?productid=21514&#038;cat=0&#038;page=1\">dalia<\/a><br \/>\n&frac12; tablespoon of each &#8211; tamarind juice and powdered <a href=\"http:\/\/www.ishopindian.com\/shop\/product.php?productid=22015&#038;cat=0&#038;page=1\">jaggery<\/a><br \/>\n1 teaspoon of each &#8211; coriander seeds (dhania), cumin and red chilli powder<br \/>\n&frac12; teaspoon of salt or to taste<br \/>\nGrind them to smooth paste by adding about one cup of water.<\/p>\n<p><font face=verdana><small><strong>Simmer:<\/strong><\/small><\/font><br \/>\nAdd the sesame-dalia paste to the curry. Stir in half teaspoon of turmeric.
