Spinach Curry (Paalakura Talimpu)

I make this spinach curry so often but I never got around to post the recipe or pictures till now. Part of basic everyday meal, versatile, feel good kind of curry and also simple enough to make frequently.

Recipe:

1 bunch of spinach, washed and chopped coarsely
1 onion, finely chopped
2 green chillies, finely chopped
2 garlic cloves, finely chopped
1 teaspoon, coconut powder or grated
Salt to taste, and pinch of turmeric
For popu – ¼ tsp each, mustard seeds and cumin

Spinach Curry on Whole Wheat Bread

Heat one teaspoon of peanut oil in a wide skillet over medium heat.
Add and toast the mustard seeds, cumin and garlic (popu).
Add the onion and green chillies and saute, stirring, until soft.
Add the coarsely chopped spinach. Cover and cook them under high heat for about 5 minutes, until they collapse and reduce in volume.
At this stage, remove the lid and sprinkle the coconut, salt and turmeric. Mix and stir-fry for another 5 more minutes, uncovered, until the water from spinach reduces in quantity.
I also added some pre cooked black chickpeas (kala Chana) to this curry.

Serve hot. Make a curry sandwich or enjoy with rice, dal and ghee or with chapati.

Spinach, Palak, Pala Kura

This green leafy vegetable is a must buy at least once a week, for me. Spinach dal and spinach curry are the most common ways, how I use this vegetable. Sometimes, when I am in a mood for fancy, restaurant kind of meal, I make the famous Palak Paneer. With rice, roti or as sandwich filler, I like my spinach.

Idly Kaaram Podi

Idli Kaaram - Made of Roased  and Powdered -urad dal, chana dal, Red Chilli, black pepper seeds, cumin, coriander seeds, mustard seeds, fenugreek seeds and tamarind,

Recipe:
½ cup Urad dal (Minapa pappu)
½ cup Chana dal (Sanaga pappu)
6 dried red chillies
6 black pepper
1 teaspoon of each – cumin, coriander seeds, mustard seeds
½ teaspoon of salt
½ teaspoon of fenugreek seeds (Menthulu)
Small piece of tamarind (optional)

Toast them in one teaspoon of oil or ghee separetly or together in an iron skillet, constantly mixing. Take care not to burn them and let cool to room temperature. Powder them using a spice grinder or mixer. Store in a clean jar. Stays fresh upto 1 to 3 months.

Drizzle some melted ghee into this powder and have it with Idlis. My home state folks go crazy for this ‘Idly – kaaram podi’ combination.

Cauliflower-Potato Curry (Aloo Gobhi)

I ran out of excuses. I avoided cooking cauliflower till now this year. But when priced at one dollar, I couldn’t think of any more excuses and bought the fresh, big, Lilly white cauliflower from the local farmers market. Even though, it is available year round, Autumn is the season for cauliflower here in US, so the low price.

On my short list of vegetables, I am reluctant to cook, cauliflower occupies the number one spot. It’s unfortunate, but my brain, it doesn’t heart the brain-like cauliflower. Only way I can eat this vegetable is when combined and cooked with other vegetables and some sort of beans following my mother’s recipe. The only thing I did different this time from the original was, instead of dried peas, I used small red beans. Clean, colorful and full of flavor, this hearty stew is extra good with rice or chapatis.

Cauliflower, Onion, Red Potato, Carrot, Red Beans, Dried Coconut, Poppy seeds, Cilantro, Ginger, Garlic, Cinnamon, Cloves, Red Chilli Powder, Turmeric and Salt

Recipe:

Vegetables
1 fresh, small-sized cauliflower, trimmed and florets cut/separated
1 potato, and one carrot – peeled, and cut into bite sized cubes
1 onion – finely sliced lengthwise
6 ripe, juicy tomatoes – chopped
2 fistfuls of soaked red beans
(Peas, chickpeas or other types of beans also work)

For Masala:
4 tablespoons of coconut powder (dry or fresh)
1 tablespoon of poppy seeds
Small pieces of cinnamon and two cloves
Few sprigs of cilantro, small piece of ginger and two garlic cloves
1 teaspoon of red chilli powder
½ teaspoon of salt and turmeric
Take all the above in a blender, add half cup of water and puree them into smooth paste.

Heat one tablespoon of peanut oil in a large, wide pot over medium heat. Do the popu or tadka (toasting mustard seeds, cumin and minced garlic). Add the onion, fry it till golden. Add the cut tomatoes, increase the heat, cover and cook for about 5 to 10 minutes, until the tomatoes soften when pressed with the back of a spoon.

Because cauliflower can cook easily and when overcooked gives out unpleasant Sulfur smell, first add the cut potatoes, carrots and red beans to the tomato gravy. Cook them until they are almost tender fork, and then add the cauliflower florets to this mix. Add the masala paste and half cup of water. Stir to combine. Reduce the heat to medium low, cover and simmer for about 20 minutes. Finally stir in the finely chopped cilantro and serve, either warm or at room temperature.

Chana Masala (Chole Batura, Chickpeas Curry)

November, when weather changes from colorful and crispy to dark and gloomy is the month of comfort food at my house. Comfort food of India almost inevitably call for some type of lentils/legumes. Among all, my favorite is the famous “Chana Masala or Chole” – this homey and hearty Punjabi fare will make even the most doubtful person worship Indian food. No wonder, it continues to be the most popular food item in Indian restaurants worldwide.

Recipe:

Chickpeas
Soak 4 cups of chickpeas in water overnight or atleast 6 hours. Take them in a pressure cooker, add salt, one teabag(optional) and water and pressure cook them until they are just tender. Take care not to overcook. Drain the water and separate one cup of cooked chickpeas. Blend these separated ones into into thick, smooth paste with little water.
Veggies
2 cups of finely chopped ripe, juicy tomatoes
1 onion, finely chopped lengthwise
Seasoning
1 tablespoon of premade Chana masala powder (Badshah or any other brand from an Indian store)
½ teaspoon of red chilli powder and salt
¼ teaspoon of turmeric
Fresh cilantro and lime juice – for garnish

Cooked Chickpeas, tomatoes, pureed chickpea paste, cilantro, onion, red chilli powder, salt, chana masala powder(Badshah brand) and turmeric

Preparation:

1. Heat one teaspoon of peanut oil or ghee in a large pot over medium heat.
2. Add and toast ¼ teaspoon each- cumin and mustard seeds.
3. When seeds start to pop, add the onion, and cook until translucent.
4. Add the tomatoes and cook on high heat until the tomatoes turn to soft. Press with a spatula and mush them.
5. To this tomato sauce, add the cooked chickpeas, pureed chickpea paste, chana masala powder, salt, red chilli powder, turmeric and one to two cups of water. Stir to combine.
6. Have a taste and adjust the spice levels to your liking. Keep the heat on medium and cook for about 20 to 30 minutes, until the curry thickened. (The curry should not spread like a flooding river when served on a plate.)
7. Just before turning off the heat, stir in finely chopped fresh cilantro and lime or lemon juice to taste.

Enjoy the chana masala with rice/roti (chapati) or with puris. Keep the leftovers refrigerated. The curry tastes very good next day.

Ragi Dosa & Orange-Banana Smoothie

After 3 days of heavy meals because of Deepavali, I wanted to try something new, easy to make and somewhat light on stomach kind of meal. Two of VKN’s, My Dhaba recipes – Ragi Dosa and Orange-banana yogurt&honey drink (HOBIY) have caught my eye.

I have all the ingredients including fresh coconut (puja offering) and oranges. So I tried out these two recipes today for lunch and they turned out spectacular tastewise.

I Loved the chewy taste of ragi dosa and the smell is incredible; it’s like the smell of earth when it is raining. I had the fresh ragi flour, perhaps that may be the reason for the incredible aroma.
(You can find ragi flour in almost all Indian grocery shops here in US. Ragi (finger millet) is one of the ancient grains and very healthy source of Calcium. )

Ragi Flour, Onion, Green Chilli, Fresh Coconut and Cilantro - Ingredients for Ragi Dosa or Utappam

Recipe:

1 cup coconut- fresh and finely grated
Onions, green chillies and cilantro – finely chopped, to taste
Salt to taste

I mixed all of the above ingredients with water in a bowl, thoroughly (like dosa/pancake batter consistency) and poured ladleful of batter onto a hot griddle. Adding few drops of oil, cooked the dosa on both sides till brown and crispy. I made four of these dosas (utappams). We had them with coconut chutney.

I also made the HOBIY. When I first read about this drink, I was little bit skeptical. First of all it’s orange and banana, then it’s yogurt. I wondered about the combination. Vijay often makes himself a drink with soya milk, banana and honey. Thinking, he may like this new drink, I prepared the VKN’s signatory HOBIY drink, by blending half cup of home made yogurt, freshly squeezed juice of one naval orange, one small banana and two tablespoons of honey and few ice cubes. Again, turned out to be one refreshing drink. There was no overpowering smell of banana. Orange juice and yogurt completely masked the smell and taste of banana. I, who normally don’t like the taste of banana in drink form, also enjoyed it.

Stuffed Green Chilli Bajjis (Mirapakaya Bajjilu)

Stuffed green chilli bajjis – whole green chillies are filled with different kinds of mixtures then dipped in gram flour batter and deep fried in oil. They are often served as accompaniment to a main meal in South India, but they are delicious as an appetizer/first course with a cup of yogurt on the side or with a glass of water:)-.

Recipe:
(For 10 to 15 green chillies)

Green chillies – Special type of green chillies are used to make stuffed bajjis. You can find them usually in Indian grocery shops. Select straight green chillies, wash and dry them first. Take a green chilli, make a slit lengthwise in the middle, keeping the ends intact. With a knife or a spoon remove the seeds, clean the insides and make space for stuffing. Put these slit, cleaned green chillies in bowl of salted water. If you are sensitive to green chillies, it’s better to wear gloves, take heed of Mrs D and Chopper Dave advise.

Stuffing: I’ve prepared three different kinds of stuffing. (I’ve had them already in my kitchen, what I did was just put them together).

First one is my favorite, traditional Raayala Seema fare that my mother prepares at home:

Half cup of roasted chana dal(dalia), 2 tablespoons of dry coconut powder and tamarind juice, 1 tsp of cumin, 1/4 tsp of salt – powder them together.

The second type of stuffing is what one can find in bajjis from street side stalls in Hyderabad. Very famous and long lines in front of these stalls for bajjis, particularly during monsoon season.

Half cup of sesame seeds, 1 tsp each of coriander seeds and cumin (all three roasted), 3 tablespoons of coconut powder and tamarind juice – mixed and made into thick paste.

The third variety is more of a North Indian fare, learned from a friend.

I had some leftover potato curry – (Fried potato and onions seasoned with garam masala powder) – I reheated the curry in microwave and mashed the potatoes into thick paste.

Batter: One cup of gram flour (besan), quarter cup of rice flour, pinch of baking soda, salt to taste and half to one glass of water – mix them all thoroughly into thick batter (more like dosa/pancake batter consistency).

Oil – Peanut oil for deep-frying.

Fill up the gap with stuffing of all the green chillies one by one and keep them on a plate. Again, one by one, dip them into the batter, drop them gently into hot oil, deep-fry them until golden, turning frequently. Remove them with a slotted spoon and drain well on absorbent paper towels.

If you want your bajjis more like street stall bajjis, what you have to do is, first dip each green chilli into batter fully, slide the side opposite of slit side onto edge of vessel, so that side of green chilli has no batter covering it and will be in direct contact with the hot oil, when deep fried. That exposed green chilli will taste crunchy.

But for an authentic taste of street food, double dip and fry again. (Dip the fried green chillibajjis in batter, this time coating them all around and deep fry in hot oil till golden. You can see both varieties in the picture below.)

Brinjal & Potato Curry (Vankaya-Alu Pulusu)

Velvety texture of young, fresh green eggplant is a pure luxury, especially when paired with potatoes and tomatoes. The purple brinjals does not have the same delicate flavor but makes a good substitute here. The combination that I like most is brinjal-potato curry with sorghum roti. I have the sorghum flour, I know how to make the roti and I wanted to make them for this curry, but I was short on time so instead I made rice, the quick and easy alternative.

Recipe:
Thai Eggplant (Green brinjal / Poluru Vankaaya)
6 to8 green brinjals
1 or 2 medium sized potatoes – peeled and cubed
4 to 6 large, plump, ripe tomatoes – diced finely
1 onion – sliced thinly lengthwise
1 tablespoon of dry coconut powder
1 tablespoon of poppy seeds (gasa gasaalu) – powdered
1 teaspoon of ginger-garlic-cilantro paste
1 teaspoon of red chilli powder and salt
1/2 teaspoon of turmeric

Preparation:

Take tap water in a pot and add one teaspoon of salt. Cut brinjals into medium size quarters and add them to salt water. This will prevent the discoloration of cut brinjals. (An old trick, I think that all home cooks know in India.)
In a big pan, heat one teaspoon of oil and do the popu or tadka(frying 1 tsp mustard seeds and cumin), add the onions, sauté them till golden. Next add tomatoes, cook them on high heat, covered for few minutes until they soften and turn into mush.
Then, add the brinjal, potato, salt, turmeric, red chilli powder, coconut, poppy seed powder and ginger-garlic paste. Add half to one glass of water, mix them thoroughly and cook them covered on medium heat for about 15 to 20 minutes or until the potatoes are tender.

Steelers Pizza

Steelers Logo from www.seatseek.comI consider Pittsburgh as my hometown in US because it was where we arrived in US from India. We spent three wonderful years full of firsts; first snow fall, first snow storm, first time assembling the furniture for our house from Ikea, first of lot of things.
And Pittsburgh is a sports town, Steelers is THE team, they all route for. Naturally we couldn’t escape the enthusiasm of locals and now we are also turned into full-fledged, The Terrible Towel waving, Steelers flag in front of the house kind of fans.

Last year was particularly exciting for us Steelers fans. The rookie quarterback brought the team almost to the finals. I could have prepared ‘Roethlis-berger’ in his honor for last years wonderful play, alas I am not a meat eater.

So instead I prepared our favorite game party food – Pizza, for this month’s sport theme party hosted by lovely Stephanie of Dispensing Happiness. Not any pizza but a pizza resembling the Steelers logo and wishing for a season of Steelers super bowl.

This Pizza is made with a basic white dough base, flavored with tomato sauce and topped with mozzarella and goat cheese and also roasted yellow and red bell peppers and olives.

“Lima beans are a very good source of cholesterol-lowering fiber, as are most other legumes. In addition to lowering cholesterol, lima beans’ high fiber content prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia. Fresh baby lima beans in tomato gravy make a tasty comforting curry. Swift, simple to prepare and so good when served with chapatis, rice or pasta. A must try!

Lima Beans Curry

Recipe:

1 cup fresh baby lima beans (=butter beans)
1 cup finely chopped onion
6 ripe, juicy tomatoes – cut or pureed

Masala Paste:
2 garlic cloves+1 inch piece of ginger+fistful of fresh coriander+ 1 tablespoon of coconut – grind into smooth paste in a blender
1 teaspoon each – chilli powder, salt and turmeric

For popu or tadka:
½ teaspoon each – cumin, mustard seeds, minced garlic and few curry leaves
1 teaspoon of peanut oil

Heat peanut oil in a large, deep skillet over medium-high heat.
Add and toast popu or tadka ingredients in listed order above.
Add and fry onions first and then the masala paste.
Add tomatoes. Cook them on high heat to mush.
Add lima beans, 1 cup of water and the seasoning (chilli powder, salt and turmeric). Stir and cook them covered until lima beans are soft and the curry reaches the thickness you desire.

Serve warm with chapatis or with rice.

Bajji(Pakora, Bhajjia)

Festival feast without bajjis – no way

Chitrannam (Lemon Rice)

Nimmakaya Pulihora:

Prasadam in temples, part of festival feast, or simple lunch – Chitrannam or lemon rice plays an important part of South Indian meal. Our celebratory feasts are not complete without this particular dish. The tangy rice prepared with lemon juice refreshes the palate after the sweet beginnings, as you may already know it is an Indian tradition to serve the sweet first. I think serving these two, traditional Indian sweet and chitrannam together, is our elders way of reminding us to appreciate life moments, both sweet and sour. That is why, I think the temple prasadam or the celebratory food in all moments of our lives includes chitrannam.

People, who know the taste, crave this lemony rice. Even though the recipe is so simple to make, there is always one expert in the family who prepares the best chitrannam. In my home, I can manage an edible one, but Vijay prepares the ‘can’t get enough’ version. We do use the same ingredients and methods; still I don’t know how his version always turns out so exceptional. I am sure it is true in every other south Indian family too. Only chosen few are blessed by Annapurna, the Goddess of Food, to prepare this favorite food of Gods. It is one of those recipes, where either you have it or you don’t. And I am sorry to say that even though I know the authentic recipe, follow all the tricks and tips still the end result in my case always turns out mediocre. There is no magic in my hand.:)

What about you, are you the chosen one? Try it out, if you have not already done so.

Recipe:
(Serves two)

Limes, cashews, peanuts, majjiga mirapakaayalu, vertically slit green chillies, mustard seeds, cumin, red chilli, curry leaves, soaked chana dal, urad dal, cubed potato

Rice:
4 cups of freshly cooked rice. (Any kind of white rice is ok for this recipe, but I prefer ‘Sona Masuri’. Cook it like for pulao or fried rice but not like pongal or risotto.
Limes and Chillies
2 to 3 juicy limes – cut and juice to a cup
6 to 8 green chillies, Indian or Thai variety – slit vertically
(Chitrannam needs spicy punch from chillies. So, add one or two chillies (of any variety) more than your normal tolerance of chillies. Otherwise the dish falls apart, and lime juice dominates the taste.)
Seasoning
¼ cup – Chana dal (senaga pappu), pre-soaked in water at least half an hour before.
2 tablespoons – urad dal (minapa pappu)
1 teaspoon each – salt and turmeric
2 tablespoons –ghee, Or oil for calorie-consicous.
For popu or tadka
1/2 tsp each – mustard seeds, cumin, and red dry chilli pieces.
12- 15 fresh curry leaves. Don’t forget to add the fresh curry leaves. Chitrannam is not authentic or complete without the curry leaves.

You can prepare decent, basic version of chitrannam with the above items. But for special occasions, and if you want to impress guests or family, then you need the following items too.

Nuts
Quarter cup – cashews
Quarter cup – peanuts
Veggies
Quarter cup vegetables – I usually add potato, finely cubed, sometimes Indian type brinjal and shredded carrot too.
5 to 6 majjiga mirapa kaayalu (Green chillies soaked in buttermilk and completely dried in sun, a specialty of Andhra), deep fried in oil.

Method:

In a skillet, heat one tablespoon of ghee. First add peanuts, fry them until they turn light brown. Remove. Add and fry cashews next. Remove from the pan to a plate, keep them aside.

Now in the same skillet, add another tablespoon of ghee. Heat. Add and fry the curry leaves first. Then cumin and mustard seeds. When seeds start to splutter, add the split green chillies, chana dal, urad dal, and cubed potatoes. Saute them till golden and crisp. In the end, sprinkle half teaspoon turmeric for that golden yellow color. Mix and then saute for another one to two minutes.

Add the sauteed ingredients of skillet, and also the toasted peanuts and cashews to the cooked rice. Stir in salt and sprinkle the limejuice. Combine thoroughly and delicately (without breaking the rice grains) with your hand or using a big slotted spoon.

Have a taste, it should zing or shock your taste buds like sucking on a fresh lime wedge. If not, add some more limejuice and salt. Mix again. And keep in mind that rice absorbs the limejuice, and the tanginess you feel during the preparation reduces in intensity after sometime.

Serve with fried majjiga mirapakaayalu (buttermilk soaked, dried green chillies) and a cup of yogurt for a nice meal.

Chitrannam, the English translation of this Telugu word is chitra= wonderful, magical, Annam= rice. This Refreshing lemony rice is all that and more, and tastes great when served hot or cold.

Stuffed and Baked Baby Portabellas

I never made stuffed mushrooms until now. As I was browsing through one of those one dollar cookbooks stocked on the checkout line during my weekend grocery shopping, I came upon a great looking stuffed baby portabella photo. That photo compelled me to tryout the accompanying recipe. I changed the ingredients to suit our tastes and tried that recipe this weekend. As I imagined, they came out perfect and Vijay, who couldn’t wait to taste them, gave his seal of approval by finishing all six in one setting. Ahh.. Weekend hunger. I also baked some potatoes and a small frittata (omelet) for me.

Recipe:

Baby Portabella Mushrooms -6
Finely chopped onion, bell peppers and green chilli – to taste
Eggs – 6
Oil and salt – to taste

1. Preheat the oven to 350°F/180°C.

2. Wash and wipe the baby portabella Baby Portabella Mushrooms stuffed with onion and yellow bell pepper mixture and egg white
mushrooms. Remove the stems and line them on a foil covered baking tray.

3. In a pan, on stove top, over medium heat, saute the onion, bell pepper and green chilli mixture for about 5 minutes or until soft. Stir in the salt.

4. Divide this sauteed onion mixture between mushrooms. Using the back of a spoon, make a depression in the mixture to form a nest. Break an egg into each mushroom (I added only egg white, removed the egg yolk). Top each egg with a small piece of Monterey jack or cheese of your choice.

5. Bake at 350°F/180°C for about 10 to 15 minutes or until egg whites are set and cheese is melted.

6. I also baked round big slices of potato as a side snack.

I think they are perfect entry for this month’s EoMeote event, hosted for first time by lovely Stephanie of Dispensing Happiness. As part of the entry, she asked for a parody of 70’s song to compliment the dish. I remember the “The 60’s’ and ‘The 70’s” series on VH1 on cable. Yes people, most of my pop culture knowledge is from watching VH1 and E True Hollywood Stories on TV. So here I go…Killing the Famous Diana Ross song “baby Love”. (Stephanie, you asked for it!)

Samosas with a Twist

For my first ever virtual blog party, a monthly event started and hosted by lovely Stephanie of Dispensing Happiness, I made these little golden parcels of potato-pea filling in all purpose flour wraps and a pitcher of refreshing watermelon juice.

Little Golden Parcels (Samosas with a Twist) & Watermelon Juice

They are a hit in my house, a party of two. Hope the hostess approves my contribution.

Recipe of Little Golden Parcels:

For Curry:Preparing Little Golden Parcels aka Samosas with a Twist
1 cup of mashed potato
Half onion, two green chillies, half cup of fresh peas, coarsely grinded
Pinch of turmeric and salt to taste
Prepare the curry by sautéing the above ingredients.

Wraps:
1. Prepare a firm dough by mixing one cup of all-purpose flour, half cup of water and a pinch of baking powder & salt. Keep it aside for at least half an hour. Meanwhile prepare the curry. When the curry is ready and cool enough to handle, take out and divide the dough into small balls. And with a rolling pin, roll out the rounds. Or simply use wonton wraps.

2. Take one teaspoon of cornstarch in a cup, make a paste by adding little water.

3. In each wrap, put a teaspoonful of curry mixture in the center. Make a line of cornstarch paste around, about half inch from the edge. Bring all four corners to the center and press together firmly to form little bags.

4. In batches, deep-fry them in oil until golden brown. Makes about 15 to 20. I don’t have chives at home right now; otherwise I could have tied a chive around the neck of each bag as garnish.

5. Serve them with a dipping sauce of your choice.
